Ingredients

  • Firm tofu - 300 grams
  • Soy sauce - 3 tablespoons
  • Mirin - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cornstarch - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Green onions - 2, sliced
  • Sesame seeds - 1 tablespoon, toasted
  • Mixed bell peppers - 150 grams, sliced
  • Shiitake mushrooms - 100 grams, sliced
  • Spinach - 100 grams

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
  2. In a bowl, mix soy sauce, mirin, sesame oil, garlic, and ginger to create a marinade. Add the tofu cubes and let them marinate for at least 10 minutes.
  3. After marinating, sprinkle cornstarch over the tofu cubes and toss gently to coat.
  4. In a large skillet, heat vegetable oil over medium-high heat. Add the tofu cubes and cook for about 4-5 minutes on each side until golden brown and crispy. Remove from the skillet and set aside.
  5. In the same skillet, add the sliced bell peppers and shiitake mushrooms, cooking for 3-4 minutes until tender. Add the spinach and cook until wilted.
  6. Return the tofu to the skillet, tossing everything together to combine. Cook for an additional 2 minutes.
  7. Serve hot, garnished with sliced green onions and toasted sesame seeds.
