Steps
- Cook the soba noodles according to package instructions, then drain and rinse under cold water to stop the cooking process.
- In a large skillet or wok, heat the sesame oil over medium heat and add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
- Add the broccoli florets, julienned carrot, and sliced red bell pepper to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.
- Stir in the cooked soba noodles, soy sauce, rice vinegar, and maple syrup. Toss everything together and cook for an additional 3-5 minutes, allowing the noodles to absorb the flavors.
