Steps

  1. Cook the soba noodles according to package instructions, then drain and rinse under cold water to stop the cooking process.
  2. In a large skillet or wok, heat the sesame oil over medium heat and add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
  3. Add the broccoli florets, julienned carrot, and sliced red bell pepper to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.
  4. Stir in the cooked soba noodles, soy sauce, rice vinegar, and maple syrup. Toss everything together and cook for an additional 3-5 minutes, allowing the noodles to absorb the flavors.
  5. Remove from heat, and stir in the chopped green onion. Season with salt and pepper to taste.
