Ingredients

  • Short grain rice - 150 grams
  • Water - 300 milliliters
  • Umeboshi plums - 3 pieces
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Chopped green onions - 2 tablespoons
  • Nori seaweed - 1 sheet, cut into strips
  • Sesame seeds - 1 tablespoon

Steps

  1. Rinse the short grain rice under cold water until the water runs clear, then drain.
  2. In a medium pot, combine the rinsed rice and 300 milliliters of water. Bring to a boil over high heat.
  3. Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is tender and the water is absorbed.
  4. While the rice is cooking, remove the pits from the umeboshi plums and chop them finely.
  5. In a small bowl, mix the chopped umeboshi plums with soy sauce and sesame oil to create a flavorful paste.
  6. Once the rice is cooked, remove it from heat and let it sit, covered, for 5 minutes.
  7. Fluff the rice with a fork and gently mix in the umeboshi paste until well combined.
  8. Serve the umeboshi rice in bowls, garnished with chopped green onions, nori strips, and a sprinkle of sesame seeds.
