- Udon noodles - 200 grams
- Vegetable broth - 500 ml
- Soy sauce - 3 tablespoons
- Miso paste - 1 tablespoon
- Tofu (firm) - 150 grams, cubed
- Spinach - 100 grams
- Carrot - 1 medium, julienned
- Green onion - 2 stalks, chopped
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Nori (seaweed) - 1 sheet, for garnish
Steps
- In a large pot, bring the vegetable broth to a boil.
- Add the miso paste and soy sauce to the boiling broth, stirring until well combined.
- Add the cubed tofu, julienned carrot, and minced garlic to the pot. Reduce the heat and let it simmer for about 5 minutes.
- In the meantime, cook the udon noodles according to package instructions, usually about 8-10 minutes. Drain and set aside.
- After the vegetables have softened, add the spinach and grated ginger to the broth, cooking for an additional 2-3 minutes until the spinach is wilted.
- In a large bowl, divide the cooked udon noodles between two servings.
- Ladle the hot broth with vegetables and tofu over the udon noodles in each bowl.
- Drizzle sesame oil on top and garnish with chopped green onions and torn nori. Serve immediately.
