Ingredients

  • Udon noodles - 200 grams
  • Vegetable broth - 500 ml
  • Soy sauce - 3 tablespoons
  • Miso paste - 1 tablespoon
  • Tofu (firm) - 150 grams, cubed
  • Spinach - 100 grams
  • Carrot - 1 medium, julienned
  • Green onion - 2 stalks, chopped
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Nori (seaweed) - 1 sheet, for garnish

Steps

  1. In a large pot, bring the vegetable broth to a boil.
  2. Add the miso paste and soy sauce to the boiling broth, stirring until well combined.
  3. Add the cubed tofu, julienned carrot, and minced garlic to the pot. Reduce the heat and let it simmer for about 5 minutes.
  4. In the meantime, cook the udon noodles according to package instructions, usually about 8-10 minutes. Drain and set aside.
  5. After the vegetables have softened, add the spinach and grated ginger to the broth, cooking for an additional 2-3 minutes until the spinach is wilted.
  6. In a large bowl, divide the cooked udon noodles between two servings.
  7. Ladle the hot broth with vegetables and tofu over the udon noodles in each bowl.
  8. Drizzle sesame oil on top and garnish with chopped green onions and torn nori. Serve immediately.
