Ingredients

  • Firm tofu - 300 grams
  • Soy sauce - 3 tablespoons
  • Mirin - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Bell pepper - 1 medium, cut into chunks
  • Zucchini - 1 medium, sliced
  • Red onion - 1 small, cut into chunks
  • Cherry tomatoes - 10 pieces
  • Skewers - 4-6 (soaked in water for 30 minutes if wooden)

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into 2.5 cm cubes.
  2. In a bowl, mix soy sauce, mirin, sesame oil, minced garlic, and grated ginger to create the marinade.
  3. Add the tofu cubes to the marinade and let them soak for at least 15 minutes, stirring occasionally.
  4. While the tofu is marinating, prepare the vegetables by cutting the bell pepper, zucchini, and red onion into chunks.
  5. Preheat a grill or grill pan over medium heat.
  6. Thread the marinated tofu and vegetables onto the skewers, alternating between tofu and vegetables.
  7. Grill the skewers for 10-12 minutes, turning occasionally, until the tofu is golden and the veggies are slightly charred.
  8. Remove from the grill and serve hot, optionally drizzling with additional soy sauce or sesame seeds.
