Vegan Tofu Skewers

Ingredients
- Firm tofu - 300 grams
- Soy sauce - 3 tablespoons
- Mirin - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Bell pepper - 1 medium, cut into chunks
- Zucchini - 1 medium, sliced
- Red onion - 1 small, cut into chunks
- Cherry tomatoes - 10 pieces
- Skewers - 4-6 (soaked in water for 30 minutes if wooden)
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into 2.5 cm cubes.
- In a bowl, mix soy sauce, mirin, sesame oil, minced garlic, and grated ginger to create the marinade.
- Add the tofu cubes to the marinade and let them soak for at least 15 minutes, stirring occasionally.
- While the tofu is marinating, prepare the vegetables by cutting the bell pepper, zucchini, and red onion into chunks.
- Preheat a grill or grill pan over medium heat.
- Thread the marinated tofu and vegetables onto the skewers, alternating between tofu and vegetables.
- Grill the skewers for 10-12 minutes, turning occasionally, until the tofu is golden and the veggies are slightly charred.
- Remove from the grill and serve hot, optionally drizzling with additional soy sauce or sesame seeds.
