Ingredients
- Brown rice - 150 grams
- Firm tofu - 200 grams
- Soy sauce - 30 ml
- Mirin - 15 ml
- Sesame oil - 10 ml
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, sliced
- Broccoli florets - 100 grams
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
- Water - 500 ml
- Salt - to taste
Steps
- Rinse the brown rice under cold water until the water runs clear, then cook it in a pot with 500 ml of water. Bring to a boil, then reduce heat, cover, and simmer for about 25 minutes or until the rice is tender and water is absorbed.
- While the rice is cooking, press the tofu to remove excess moisture. Cut the tofu into bite-sized cubes.
- In a bowl, mix the soy sauce, mirin, sesame oil, minced garlic, and grated ginger to create a marinade. Add the tofu cubes and let them marinate for at least 10 minutes.
- Heat a non-stick skillet over medium heat and add the marinated tofu, reserving the marinade. Cook the tofu for about 5-7 minutes, turning occasionally until golden brown.
- Add the julienned carrot, sliced bell pepper, and broccoli florets to the skillet with the tofu. Stir-fry the vegetables for about 5-7 minutes until they are tender but still crisp.
- Pour the reserved marinade over the stir-fried tofu and vegetables, mixing well to coat. Cook for an additional 2-3 minutes to heat through.
- Fluff the cooked brown rice and divide it between two bowls. Top each bowl with the tofu and vegetable mixture.
- Garnish with chopped green onions and a sprinkle of sesame seeds before serving.
