Ingredients

  • Brown rice - 150 grams
  • Firm tofu - 200 grams
  • Soy sauce - 30 ml
  • Mirin - 15 ml
  • Sesame oil - 10 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Broccoli florets - 100 grams
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Water - 500 ml
  • Salt - to taste

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then cook it in a pot with 500 ml of water. Bring to a boil, then reduce heat, cover, and simmer for about 25 minutes or until the rice is tender and water is absorbed.
  2. While the rice is cooking, press the tofu to remove excess moisture. Cut the tofu into bite-sized cubes.
  3. In a bowl, mix the soy sauce, mirin, sesame oil, minced garlic, and grated ginger to create a marinade. Add the tofu cubes and let them marinate for at least 10 minutes.
  4. Heat a non-stick skillet over medium heat and add the marinated tofu, reserving the marinade. Cook the tofu for about 5-7 minutes, turning occasionally until golden brown.
  5. Add the julienned carrot, sliced bell pepper, and broccoli florets to the skillet with the tofu. Stir-fry the vegetables for about 5-7 minutes until they are tender but still crisp.
  6. Pour the reserved marinade over the stir-fried tofu and vegetables, mixing well to coat. Cook for an additional 2-3 minutes to heat through.
  7. Fluff the cooked brown rice and divide it between two bowls. Top each bowl with the tofu and vegetable mixture.
  8. Garnish with chopped green onions and a sprinkle of sesame seeds before serving.
