Ingredients

  • Soba noodles - 150 grams
  • Sesame paste (tahini) - 2 tablespoons
  • Peanut butter - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Chili oil - 1 teaspoon
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Green onions, chopped - 2 tablespoons
  • Carrots, julienned - 1 medium
  • Spinach - 100 grams
  • Sesame seeds - 1 tablespoon
  • Water - 300 milliliters

Steps

  1. Cook the soba noodles according to package instructions, then drain and set aside.
  2. In a bowl, combine sesame paste, peanut butter, soy sauce, rice vinegar, chili oil, minced garlic, and grated ginger to create the sauce.
  3. In a large pan, heat a little water over medium heat and add the julienned carrots. Sauté for about 3 minutes until they start to soften.
  4. Add the spinach to the pan and cook for an additional 2 minutes until wilted.
  5. Pour the sauce over the cooked vegetables and stir well to combine.
  6. Add the cooked soba noodles to the pan and toss until evenly coated with the sauce.
  7. Serve the dish in bowls, garnished with chopped green onions and sesame seeds.
