- Chili oil - 1 teaspoon
- Garlic, minced - 2 cloves
- Ginger, grated - 1 teaspoon
- Green onions, chopped - 2 tablespoons
- Carrots, julienned - 1 medium
- Spinach - 100 grams
- Sesame seeds - 1 tablespoon
- Water - 300 milliliters
Steps
- Cook the soba noodles according to package instructions, then drain and set aside.
- In a bowl, combine sesame paste, peanut butter, soy sauce, rice vinegar, chili oil, minced garlic, and grated ginger to create the sauce.
- In a large pan, heat a little water over medium heat and add the julienned carrots. Sauté for about 3 minutes until they start to soften.
- Add the spinach to the pan and cook for an additional 2 minutes until wilted.
- Pour the sauce over the cooked vegetables and stir well to combine.
- Add the cooked soba noodles to the pan and toss until evenly coated with the sauce.
