Ingredients

  • Short-grain Japanese rice - 1 cup (200g)
  • Water - 1.5 cups (360ml)
  • Carrot - 1 medium, diced (70g)
  • Shiitake mushrooms - 4, sliced (50g)
  • Green peas - 1/2 cup (75g)
  • Soy sauce - 2 tablespoons (30ml)
  • Mirin - 1 tablespoon (15ml)
  • Sesame oil - 1 teaspoon (5ml)
  • Dried kombu - 1 piece (5g)
  • Salt - 1/2 teaspoon (3g)
  • Chopped green onions - 2 tablespoons (15g)

Steps

  1. Rinse the short-grain Japanese rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a medium pot, heat the sesame oil over medium heat, then add the diced carrot and sliced shiitake mushrooms. Sauté for about 5 minutes until they soften.
  3. Add the soaked and drained rice to the pot and stir to combine with the vegetables.
  4. Pour in the water, soy sauce, mirin, salt, and add the piece of dried kombu. Stir gently to mix.
  5. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and cover the pot with a lid.
  6. Simmer the rice for 25 minutes without lifting the lid, then add the green peas on top without stirring.
  7. Cover the pot again and let it steam for an additional 5-10 minutes off the heat.
  8. Remove the kombu, fluff the rice gently with a fork, and stir in chopped green onions before serving.
