- Short-grain Japanese rice - 1 cup (200g)
- Water - 1.5 cups (360ml)
- Carrot - 1 medium, diced (70g)
- Shiitake mushrooms - 4, sliced (50g)
- Green peas - 1/2 cup (75g)
- Soy sauce - 2 tablespoons (30ml)
- Mirin - 1 tablespoon (15ml)
- Sesame oil - 1 teaspoon (5ml)
- Dried kombu - 1 piece (5g)
- Salt - 1/2 teaspoon (3g)
- Chopped green onions - 2 tablespoons (15g)
Steps
- Rinse the short-grain Japanese rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a medium pot, heat the sesame oil over medium heat, then add the diced carrot and sliced shiitake mushrooms. Sauté for about 5 minutes until they soften.
- Add the soaked and drained rice to the pot and stir to combine with the vegetables.
- Pour in the water, soy sauce, mirin, salt, and add the piece of dried kombu. Stir gently to mix.
- Bring the mixture to a boil over medium-high heat, then reduce the heat to low and cover the pot with a lid.
- Simmer the rice for 25 minutes without lifting the lid, then add the green peas on top without stirring.
- Cover the pot again and let it steam for an additional 5-10 minutes off the heat.
- Remove the kombu, fluff the rice gently with a fork, and stir in chopped green onions before serving.
