Ingredients

  • Somen noodles - 200 grams

  • Green onion - 2 stalks, chopped
  • Sesame oil - 1 tablespoon
  • Soy sauce - 3 tablespoons
  • Rice vinegar - 1 tablespoon
  • Maple syrup - 1 teaspoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Sesame seeds - 1 tablespoon, toasted
  • Fresh cilantro - a handful, chopped (optional)

Steps

  1. Cook the somen noodles according to the package instructions, usually about 3-4 minutes. Drain and rinse under cold water to stop cooking.
  2. In a bowl, combine the soy sauce, rice vinegar, maple syrup, sesame oil, minced garlic, and grated ginger. Mix well to create the dressing.
