Ingredients

  • Soba noodles - 150g
  • Firm tofu - 200g, drained and crumbled
  • Spinach - 100g, fresh or frozen
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1, sliced
  • Mushrooms - 100g, sliced
  • Soy sauce - 2 tablespoons
  • Nutritional yeast - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Coconut milk - 150ml
  • Olive oil - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Green onions - 2, chopped (for garnish)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cook the soba noodles according to package instructions, then drain and set aside.
  3. In a large skillet, heat olive oil over medium heat and sauté garlic and ginger until fragrant, about 1 minute.
  4. Add the sliced mushrooms, carrot, and red bell pepper to the skillet, and cook for about 5-7 minutes until softened.
  5. Stir in the spinach and cook until wilted, then remove from heat.
  6. In a bowl, combine the crumbled tofu, coconut milk, nutritional yeast, soy sauce, salt, and black pepper. Mix until smooth and creamy.
  7. In a large mixing bowl, combine the cooked soba noodles with the sautéed vegetables and tofu mixture. Toss until everything is well coated.
  8. Transfer the mixture to a greased baking dish and spread evenly.
  9. Bake in the preheated oven for 20-25 minutes, or until lightly golden on top.
  10. Remove from the oven, garnish with chopped green onions and sesame seeds, and serve warm.
