Ingredients
- Soba noodles - 150g
- Firm tofu - 200g, drained and crumbled
- Spinach - 100g, fresh or frozen
- Carrot - 1 medium, julienned
- Red bell pepper - 1, sliced
- Mushrooms - 100g, sliced
- Soy sauce - 2 tablespoons
- Nutritional yeast - 3 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Coconut milk - 150ml
- Olive oil - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Green onions - 2, chopped (for garnish)
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- Cook the soba noodles according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat and sauté garlic and ginger until fragrant, about 1 minute.
- Add the sliced mushrooms, carrot, and red bell pepper to the skillet, and cook for about 5-7 minutes until softened.
- Stir in the spinach and cook until wilted, then remove from heat.
- In a bowl, combine the crumbled tofu, coconut milk, nutritional yeast, soy sauce, salt, and black pepper. Mix until smooth and creamy.
- In a large mixing bowl, combine the cooked soba noodles with the sautéed vegetables and tofu mixture. Toss until everything is well coated.
- Transfer the mixture to a greased baking dish and spread evenly.
- Bake in the preheated oven for 20-25 minutes, or until lightly golden on top.
- Remove from the oven, garnish with chopped green onions and sesame seeds, and serve warm.
