Ingredients

  • Soba noodles - 100 grams
  • Firm tofu - 150 grams
  • Spinach - 100 grams
  • Carrot - 1 medium, grated
  • Green onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Nutritional yeast - 2 tablespoons
  • Almond milk - 100 ml
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cook the soba noodles according to package instructions. Drain and set aside.
  3. In a blender, combine the tofu, almond milk, nutritional yeast, soy sauce, garlic, ginger, salt, and pepper. Blend until smooth and creamy.
  4. In a large mixing bowl, combine the cooked soba noodles, spinach, grated carrot, and chopped green onions.
  5. Pour the tofu sauce over the noodle mixture and toss until everything is well coated.
  6. Transfer the mixture into a greased baking dish and sprinkle sesame seeds on top.
  7. Drizzle with olive oil and bake in the preheated oven for 25-30 minutes, or until the top is golden and slightly crispy.
  8. Remove from the oven and let it cool for a few minutes before serving.
