Ingredients
- Soba noodles - 100 grams
- Firm tofu - 150 grams
- Spinach - 100 grams
- Carrot - 1 medium, grated
- Green onions - 2, chopped
- Soy sauce - 2 tablespoons
- Nutritional yeast - 2 tablespoons
- Almond milk - 100 ml
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Sesame seeds - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- Cook the soba noodles according to package instructions. Drain and set aside.
- In a blender, combine the tofu, almond milk, nutritional yeast, soy sauce, garlic, ginger, salt, and pepper. Blend until smooth and creamy.
- In a large mixing bowl, combine the cooked soba noodles, spinach, grated carrot, and chopped green onions.
- Pour the tofu sauce over the noodle mixture and toss until everything is well coated.
- Transfer the mixture into a greased baking dish and sprinkle sesame seeds on top.
- Drizzle with olive oil and bake in the preheated oven for 25-30 minutes, or until the top is golden and slightly crispy.
- Remove from the oven and let it cool for a few minutes before serving.
