Ingredients

  • Soba noodles - 100 grams

  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Maple syrup - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Fresh cilantro - a handful, chopped
  • Salt - to taste

Steps

  1. Cook the soba noodles in a pot of boiling water according to the package instructions, usually about 5-7 minutes.
  2. Once cooked, drain the noodles and rinse under cold water to stop the cooking process and cool them down.
  3. In a large mixing bowl, whisk together sesame oil, soy sauce, rice vinegar, and maple syrup to create the dressing.
  4. Add the cooled soba noodles, cucumber, carrot, red bell pepper, and green onions to the bowl with the dressing.
  5. Toss all the ingredients together until the noodles and vegetables are well coated in the dressing.
  6. Sprinkle sesame seeds and chopped cilantro on top for garnish.
  7. Serve immediately or chill in the refrigerator for 15 minutes for a refreshing cold dish.
