Ingredients

  • Potato - 300 grams
  • All-purpose flour - 100 grams
  • Shiso leaves - 10 grams, finely chopped
  • Olive oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Nutritional yeast - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 200 ml

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Boil the potatoes in salted water until tender, about 15-20 minutes, then drain and let cool slightly.
  3. Peel the potatoes and mash them in a bowl until smooth.
  4. Add the all-purpose flour, chopped shiso leaves, olive oil, soy sauce, nutritional yeast, garlic powder, salt, and black pepper to the mashed potatoes. Mix until a dough forms.
  5. On a floured surface, divide the dough into 4 portions. Roll each portion into a long rope about 1 cm thick, then cut into 2 cm pieces to form gnocchi.
  6. Place the gnocchi on a floured tray and let them rest for 10 minutes.
  7. In a baking dish, combine the vegetable broth and remaining shiso leaves. Gently place the gnocchi in the dish, ensuring they are submerged in the broth.
  8. Bake in the preheated oven for 20-25 minutes, until the gnocchi are slightly golden and cooked through.
  9. Remove from the oven and let cool for a few minutes before serving.
