- Potato - 300 grams
- All-purpose flour - 100 grams
- Shiso leaves - 10 grams, finely chopped
- Olive oil - 1 tablespoon
- Soy sauce - 1 tablespoon
- Nutritional yeast - 2 tablespoons
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 200 ml
Steps
- Preheat the oven to 200°C (400°F).
- Boil the potatoes in salted water until tender, about 15-20 minutes, then drain and let cool slightly.
- Peel the potatoes and mash them in a bowl until smooth.
- Add the all-purpose flour, chopped shiso leaves, olive oil, soy sauce, nutritional yeast, garlic powder, salt, and black pepper to the mashed potatoes. Mix until a dough forms.
- On a floured surface, divide the dough into 4 portions. Roll each portion into a long rope about 1 cm thick, then cut into 2 cm pieces to form gnocchi.
- Place the gnocchi on a floured tray and let them rest for 10 minutes.
- In a baking dish, combine the vegetable broth and remaining shiso leaves. Gently place the gnocchi in the dish, ensuring they are submerged in the broth.
- Bake in the preheated oven for 20-25 minutes, until the gnocchi are slightly golden and cooked through.
- Remove from the oven and let cool for a few minutes before serving.
