Ingredients

  • Sushi rice - 200 grams
  • Water - 250 ml
  • Rice vinegar - 2 tablespoons
  • Sugar - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Avocado - 1 medium, mashed
  • Pickled ginger - 50 grams, chopped
  • Nori sheets - 2, cut into halves
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Rinse the sushi rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  3. Remove the saucepan from heat and let it sit, covered, for an additional 10 minutes to steam the rice.
  4. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold the mixture into the cooked rice.
  5. Allow the rice to cool slightly until it is warm but manageable to handle.
  6. In a separate bowl, combine the mashed avocado and chopped pickled ginger.
  7. Wet your hands with water to prevent sticking, then take a handful of rice and form it into a triangle shape.
  8. Make an indentation in the center of the rice triangle and place a spoonful of the avocado-ginger mixture inside.
  9. Encapsulate the filling by molding the rice around it, ensuring it is well sealed.
  10. Wrap each onigiri with a half sheet of nori and sprinkle with toasted sesame seeds.
  11. Repeat the process with the remaining rice and filling.
  12. Serve immediately or wrap in plastic wrap for a portable breakfast.
