Ingredients
- Sushi rice - 200 grams
- Water - 250 ml
- Rice vinegar - 2 tablespoons
- Sugar - 1 teaspoon
- Salt - 1/2 teaspoon
- Avocado - 1 medium, mashed
- Pickled ginger - 50 grams, chopped
- Nori sheets - 2, cut into halves
- Sesame seeds - 1 tablespoon, toasted
Steps
- Rinse the sushi rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- Remove the saucepan from heat and let it sit, covered, for an additional 10 minutes to steam the rice.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold the mixture into the cooked rice.
- Allow the rice to cool slightly until it is warm but manageable to handle.
- In a separate bowl, combine the mashed avocado and chopped pickled ginger.
- Wet your hands with water to prevent sticking, then take a handful of rice and form it into a triangle shape.
- Make an indentation in the center of the rice triangle and place a spoonful of the avocado-ginger mixture inside.
- Encapsulate the filling by molding the rice around it, ensuring it is well sealed.
- Wrap each onigiri with a half sheet of nori and sprinkle with toasted sesame seeds.
- Repeat the process with the remaining rice and filling.
- Serve immediately or wrap in plastic wrap for a portable breakfast.
