Ingredients

  • Kombu seaweed - 10 grams
  • Dried shiitake mushrooms - 5 grams
  • Water - 800 ml
  • Soy sauce - 3 tablespoons
  • Mirin - 2 tablespoons
  • Koya-dofu (freeze-dried tofu) - 100 grams
  • Daikon radish - 100 grams, sliced
  • Carrot - 100 grams, sliced
  • Konjac (konnyaku) - 100 grams, cut into bite-sized pieces
  • Green onions - 2 stalks, chopped
  • Miso paste - 1 tablespoon (optional for additional flavor)

Steps

  1. Soak the kombu and dried shiitake mushrooms in 800 ml of water for at least 30 minutes to create a dashi broth.
  2. After soaking, bring the kombu and mushroom-infused water to a gentle simmer. Remove the kombu just before boiling.
  3. Add soy sauce and mirin to the dashi broth and stir well.
  4. Add sliced daikon radish and carrot to the pot, and simmer for 10 minutes until slightly tender.
  5. Introduce the koya-dofu and konjac to the pot, and continue to simmer for another 10 minutes.
  6. If using, stir in the miso paste until fully dissolved, then add the chopped green onions.
  7. Simmer for an additional 5 minutes to meld the flavors, then serve hot in bowls.
