- Kombu seaweed - 10 grams
- Dried shiitake mushrooms - 5 grams
- Water - 800 ml
- Soy sauce - 3 tablespoons
- Mirin - 2 tablespoons
- Koya-dofu (freeze-dried tofu) - 100 grams
- Daikon radish - 100 grams, sliced
- Carrot - 100 grams, sliced
- Konjac (konnyaku) - 100 grams, cut into bite-sized pieces
- Green onions - 2 stalks, chopped
- Miso paste - 1 tablespoon (optional for additional flavor)
Steps
- Soak the kombu and dried shiitake mushrooms in 800 ml of water for at least 30 minutes to create a dashi broth.
- After soaking, bring the kombu and mushroom-infused water to a gentle simmer. Remove the kombu just before boiling.
- Add soy sauce and mirin to the dashi broth and stir well.
- Add sliced daikon radish and carrot to the pot, and simmer for 10 minutes until slightly tender.
- Introduce the koya-dofu and konjac to the pot, and continue to simmer for another 10 minutes.
- If using, stir in the miso paste until fully dissolved, then add the chopped green onions.
- Simmer for an additional 5 minutes to meld the flavors, then serve hot in bowls.
