Ingredients
- Udon noodles - 200 grams
- Firm tofu - 200 grams
- Soy sauce - 3 tablespoons
- Mirin - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Carrot - 1 medium, julienned
- Shiitake mushrooms - 100 grams, sliced
- Spinach - 100 grams
- Green onions - 2, chopped
- Vegetable broth - 750 milliliters
- Toasted sesame seeds - for garnish
Steps
- Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
- In a bowl, combine soy sauce, mirin, sesame oil, garlic, and ginger. Add the tofu cubes and marinate for 10 minutes.
- While the tofu is marinating, cook the udon noodles according to package instructions. Drain and set aside.
- In a large pot, heat a little sesame oil over medium heat. Add the marinated tofu and cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.
- In the same pot, add the carrots and shiitake mushrooms, sautéing for about 3-4 minutes until softened.
- Pour in the vegetable broth and bring to a simmer. Add the spinach and cooked udon noodles to the pot, stirring to combine.
- Return the tofu to the pot and allow everything to heat through for about 2-3 minutes.
- Serve hot, garnished with green onions and toasted sesame seeds.
