- Sesame oil - 1 tablespoon (15ml)

Steps
- Slice the eggplants in half lengthwise, then crosswise into 2-3 pieces.
- In a pot, heat the sesame oil over medium heat. Add the eggplant pieces and sauté for about 5 minutes until they start to soften.
- In a separate bowl, mix together the soy sauce, mirin, dashi, and sugar until the sugar is dissolved.
- Pour the sauce mixture over the sautéed eggplants in the pot. Bring to a gentle boil.
- Reduce the heat to low, cover the pot, and simmer for about 15-20 minutes, or until the eggplants are tender.
- Remove the lid and let it cook for an additional 5 minutes to thicken the sauce slightly.
- Serve warm, garnished with chopped green onions and sesame seeds if desired.
