  • Mirin - 30ml
  • Dashi (vegan) - 240ml
  • Sugar - 1 tablespoon (15g)
  • Sesame oil - 1 tablespoon (15ml)
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon (optional)

Steps

  1. Slice the eggplants in half lengthwise, then crosswise into 2-3 pieces.
  2. In a pot, heat the sesame oil over medium heat. Add the eggplant pieces and sauté for about 5 minutes until they start to soften.
  3. In a separate bowl, mix together the soy sauce, mirin, dashi, and sugar until the sugar is dissolved.
  4. Pour the sauce mixture over the sautéed eggplants in the pot. Bring to a gentle boil.
  5. Reduce the heat to low, cover the pot, and simmer for about 15-20 minutes, or until the eggplants are tender.
  6. Remove the lid and let it cook for an additional 5 minutes to thicken the sauce slightly.
  7. Serve warm, garnished with chopped green onions and sesame seeds if desired.
