  • glutinous rice flour - 1 cup (120g)
  • plant-based milk - 1 cup (240ml)
  • maple syrup - 2 tablespoons (30ml)
  • baking powder - 1 teaspoon (4g)
  • vanilla extract - 1 teaspoon (5ml)
  • salt - 1/4 teaspoon (1.5g)
  • coconut oil - 2 tablespoons (30ml), melted

Steps

  1. In a mixing bowl, combine the glutinous rice flour, baking powder, and salt.
  2. In another bowl, whisk together the plant-based milk, maple syrup, vanilla extract, and melted coconut oil.
  3. Pour the wet ingredients into the dry ingredients and mix until well combined; the batter should be smooth and slightly thick.
  4. Preheat your waffle iron and lightly grease it with a little coconut oil.
  5. Pour half of the batter into the preheated waffle iron and cook according to the manufacturer's instructions, usually about 5-7 minutes, until golden brown.
