- Sweet rice flour (mochi flour) - 100g
- Water - 150ml
- Maple syrup - 2 tablespoons
- Cornstarch - 2 tablespoons (for dusting)
- Coconut milk (full fat) - 200ml
- Vanilla extract - 1 teaspoon
- Agave syrup - 1 tablespoon
- Salt - a pinch
Steps
- In a mixing bowl, combine the sweet rice flour, water, and maple syrup, stirring until smooth.
- Transfer the mixture to a microwave-safe bowl or a steamer basket. If using a microwave, cover with a damp cloth and microwave on high for 1 minute. Stir and repeat for another 2-3 minutes until the mixture is thick and sticky.
- If using a steamer, steam for about 15-20 minutes until the mixture is cooked through and slightly translucent.
- Once cooked, dust a clean surface with cornstarch. Pour the mochi mixture onto the surface and let it cool slightly.
- While the mochi cools, prepare the ice cream by mixing the coconut milk, vanilla extract, agave syrup, and a pinch of salt in a bowl until well combined. Freeze for about 2 hours until it is firm but still scoopable.
- Once the mochi is cool, divide it into two equal pieces. Flatten each piece into a circle about 1/4 inch thick.
- Scoop a small amount of the coconut ice cream onto the center of each mochi circle. Fold the edges over the ice cream and pinch to seal it tightly.
- Dust the finished mochi ice cream with additional cornstarch to prevent sticking, then place them in the freezer for at least 30 minutes before serving.
