Ingredients

  • Sweet rice flour (mochi flour) - 100g
  • Water - 150ml
  • Maple syrup - 2 tablespoons
  • Cornstarch - 2 tablespoons (for dusting)
  • Coconut milk (full fat) - 200ml
  • Vanilla extract - 1 teaspoon
  • Agave syrup - 1 tablespoon
  • Salt - a pinch

Steps

  1. In a mixing bowl, combine the sweet rice flour, water, and maple syrup, stirring until smooth.
  2. Transfer the mixture to a microwave-safe bowl or a steamer basket. If using a microwave, cover with a damp cloth and microwave on high for 1 minute. Stir and repeat for another 2-3 minutes until the mixture is thick and sticky.
  3. If using a steamer, steam for about 15-20 minutes until the mixture is cooked through and slightly translucent.
  4. Once cooked, dust a clean surface with cornstarch. Pour the mochi mixture onto the surface and let it cool slightly.
  5. While the mochi cools, prepare the ice cream by mixing the coconut milk, vanilla extract, agave syrup, and a pinch of salt in a bowl until well combined. Freeze for about 2 hours until it is firm but still scoopable.
  6. Once the mochi is cool, divide it into two equal pieces. Flatten each piece into a circle about 1/4 inch thick.
  7. Scoop a small amount of the coconut ice cream onto the center of each mochi circle. Fold the edges over the ice cream and pinch to seal it tightly.
  8. Dust the finished mochi ice cream with additional cornstarch to prevent sticking, then place them in the freezer for at least 30 minutes before serving.
