Ingredients

  • Sugar - 30 grams
  • Salt - a pinch
  • Red bean paste (sweetened) - 50 grams
  • Cornstarch (for dusting) - 20 grams

Steps

  1. In a mixing bowl, combine glutinous rice flour, sugar, and salt.
  2. Gradually add water while stirring until the mixture is smooth and free of lumps.
  3. Transfer the mixture to a microwave-safe bowl and cover it with a damp cloth.
  4. Microwave the mixture on high for 1 minute, stir, then microwave for another minute. Repeat this process until the mochi is thick and slightly translucent (about 3-4 minutes total).
  5. Dust a clean surface with cornstarch and pour the cooked mochi onto it, being careful as it may be hot.
  6. Allow the mochi to cool slightly, then knead it gently with cornstarch-coated hands until it becomes smooth and pliable.
  7. Divide the mochi into four equal pieces. Flatten each piece into a disc and place a teaspoon of red bean paste in the center.
  8. Wrap the mochi around the filling and pinch to seal. Shape into balls or discs and dust with additional cornstarch to prevent sticking.
  9. Serve immediately or store in an airtight container at room temperature for up to one day.
