Steps
- In a mixing bowl, combine glutinous rice flour, sugar, and salt.
- Gradually add water while stirring until the mixture is smooth and free of lumps.
- Transfer the mixture to a microwave-safe bowl and cover it with a damp cloth.
- Microwave the mixture on high for 1 minute, stir, then microwave for another minute. Repeat this process until the mochi is thick and slightly translucent (about 3-4 minutes total).
- Dust a clean surface with cornstarch and pour the cooked mochi onto it, being careful as it may be hot.
- Allow the mochi to cool slightly, then knead it gently with cornstarch-coated hands until it becomes smooth and pliable.
- Divide the mochi into four equal pieces. Flatten each piece into a disc and place a teaspoon of red bean paste in the center.
- Wrap the mochi around the filling and pinch to seal. Shape into balls or discs and dust with additional cornstarch to prevent sticking.
- Serve immediately or store in an airtight container at room temperature for up to one day.
