- Firm tofu - 200 grams
- Zucchini - 1 medium
- Mushrooms (shiitake or button) - 100 grams
- Bell pepper (red or yellow) - 1 medium
- Carrot - 1 medium
- Panko breadcrumbs - 100 grams
- All-purpose flour - 50 grams
- Cornstarch - 30 grams
- Plant-based milk - 100 ml
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - for frying
Steps
- Press the firm tofu for about 15 minutes to remove excess water, then cut it into 1-inch cubes.
- Slice the zucchini, mushrooms, bell pepper, and carrot into bite-sized pieces.
- In a bowl, mix the all-purpose flour, cornstarch, salt, and black pepper.
- In another bowl, combine the plant-based milk, soy sauce, and sesame oil to create a wet batter.
- Prepare a plate with panko breadcrumbs.
- Skewer the tofu and vegetables onto bamboo skewers, alternating between them.
- Dip each skewer first into the flour mixture, then into the wet batter, and finally coat with panko breadcrumbs, pressing gently to adhere.
- Heat vegetable oil in a deep frying pan over medium heat.
- Fry the skewers in batches for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove from oil and drain on paper towels. Serve hot with dipping sauce of your choice.
