Ingredients

  • Firm tofu - 200 grams
  • Zucchini - 1 medium, sliced into rounds
  • Red bell pepper - 1, cut into chunks
  • Mushrooms - 100 grams, halved
  • Carrot - 1 medium, cut into sticks
  • Panko breadcrumbs - 100 grams
  • All-purpose flour - 50 grams
  • Cornstarch - 30 grams
  • Water - 150 ml
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Maple syrup - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - for frying

Steps

  1. Press the firm tofu for about 15 minutes to remove excess moisture, then cut it into cubes.
  2. In a mixing bowl, combine the all-purpose flour, cornstarch, water, garlic powder, salt, and black pepper to create a batter.
  3. Prepare the skewers by alternating the tofu, zucchini, red bell pepper, mushrooms, and carrot onto each skewer.
  4. Dip each skewer into the batter, ensuring it's well coated, then roll in the panko breadcrumbs to cover completely.
  5. Heat vegetable oil in a large pan over medium heat. Once hot, carefully place the skewers in the pan, frying for about 3-4 minutes on each side until golden brown and crispy.
  6. While frying, prepare the dipping sauce by mixing soy sauce, rice vinegar, and maple syrup in a small bowl.
  7. Once the skewers are cooked, remove them from the pan and place them on paper towels to absorb excess oil.
  8. Serve the Vegan Kushi Katsu hot with the dipping sauce on the side.
