Ingredients
- Firm tofu - 200 grams
- Zucchini - 1 medium, sliced into rounds
- Red bell pepper - 1, cut into chunks
- Mushrooms - 100 grams, halved
- Carrot - 1 medium, cut into sticks
- Panko breadcrumbs - 100 grams
- All-purpose flour - 50 grams
- Cornstarch - 30 grams
- Water - 150 ml
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Maple syrup - 1 teaspoon
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - for frying
Steps
- Press the firm tofu for about 15 minutes to remove excess moisture, then cut it into cubes.
- In a mixing bowl, combine the all-purpose flour, cornstarch, water, garlic powder, salt, and black pepper to create a batter.
- Prepare the skewers by alternating the tofu, zucchini, red bell pepper, mushrooms, and carrot onto each skewer.
- Dip each skewer into the batter, ensuring it's well coated, then roll in the panko breadcrumbs to cover completely.
- Heat vegetable oil in a large pan over medium heat. Once hot, carefully place the skewers in the pan, frying for about 3-4 minutes on each side until golden brown and crispy.
- While frying, prepare the dipping sauce by mixing soy sauce, rice vinegar, and maple syrup in a small bowl.
- Once the skewers are cooked, remove them from the pan and place them on paper towels to absorb excess oil.
- Serve the Vegan Kushi Katsu hot with the dipping sauce on the side.
