- Potatoes - 300 grams
- Carrot - 50 grams, finely chopped
- Green peas - 50 grams, cooked
- Onion - 50 grams, finely chopped
- Garlic - 1 clove, minced
- Soy sauce - 1 tablespoon
- Nutritional yeast - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon (for baking)
- Panko breadcrumbs - 1 cup
Steps
- Preheat your oven to 200°C (400°F).
- Peel and chop the potatoes into chunks. Boil them in salted water for about 15 minutes or until tender.
- While the potatoes are boiling, heat a small pan over medium heat and add a splash of water or a bit of olive oil. Sauté the chopped onion, minced garlic, and carrot until they are soft, about 5-7 minutes.
- Once the potatoes are cooked, drain them and mash them in a large bowl. Add the sautéed mixture, green peas, soy sauce, nutritional yeast, salt, and black pepper. Mix until well combined.
- Allow the mixture to cool for a few minutes, then shape it into small patties (about 6-8 patties).
- Place the panko breadcrumbs in a shallow dish. Dip each patty into the breadcrumbs, ensuring they are fully coated.
- Arrange the breaded patties on a baking sheet lined with parchment paper. Drizzle olive oil over the top of each patty.
- Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the oven and allow to cool slightly before serving.
