Ingredients

  • Burdock root - 150 grams
  • Carrot - 100 grams
  • Sesame oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Sugar - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Green onions - 1 stalk
  • Water - 1 cup

Steps

  1. Wash and peel the burdock root and carrot. Cut the burdock root into thin matchsticks and the carrot into julienne strips.
  2. Soak the burdock root in water for about 5 minutes to remove some bitterness, then drain.
  3. In a skillet, heat the sesame oil over medium heat. Add the burdock root and stir-fry for about 5 minutes until slightly tender.
  4. Add the carrot strips to the skillet and continue to stir-fry for another 3-4 minutes until both vegetables are tender.
  5. In a small bowl, mix together the soy sauce, mirin, and sugar. Pour this mixture over the vegetables in the skillet.
  6. Stir well to combine and cook for an additional 2 minutes, allowing the flavors to meld.
  7. Remove from heat and sprinkle with sesame seeds and chopped green onions before serving.
