- Sugar - 1 teaspoon

- Green onions - 1 stalk
- Water - 1 cup
Steps
- Wash and peel the burdock root and carrot. Cut the burdock root into thin matchsticks and the carrot into julienne strips.
- Soak the burdock root in water for about 5 minutes to remove some bitterness, then drain.
- In a skillet, heat the sesame oil over medium heat. Add the burdock root and stir-fry for about 5 minutes until slightly tender.
- Add the carrot strips to the skillet and continue to stir-fry for another 3-4 minutes until both vegetables are tender.
- In a small bowl, mix together the soy sauce, mirin, and sugar. Pour this mixture over the vegetables in the skillet.
- Stir well to combine and cook for an additional 2 minutes, allowing the flavors to meld.
- Remove from heat and sprinkle with sesame seeds and chopped green onions before serving.
