Ingredients

  • Firm tofu - 200 grams
  • Panko breadcrumbs - 100 grams
  • All-purpose flour - 50 grams
  • Plant-based milk - 100 ml
  • Soy sauce - 1 tablespoon
  • Vegetable oil - for frying
  • Whole grain bread - 4 slices
  • Cabbage - 100 grams, finely shredded
  • Tonkatsu sauce - 2 tablespoons
  • Sesame seeds - 1 tablespoon (optional)

Steps

  1. Press the tofu for at least 15 minutes to remove excess moisture, then slice it into two equal cutlets.
  2. In a shallow bowl, prepare the batter by mixing the all-purpose flour, plant-based milk, and soy sauce until smooth.
  3. In another bowl, place the panko breadcrumbs. Dip each tofu cutlet first into the batter, then coat it evenly with the panko breadcrumbs.
  4. Heat vegetable oil in a frying pan over medium heat. Once hot, carefully place the breaded tofu cutlets into the pan and fry for about 3-4 minutes on each side, or until golden brown and crispy.
  5. Remove the fried tofu from the pan and place it on paper towels to absorb excess oil.
  6. Toast the whole grain bread slices lightly in a toaster or on a pan.
  7. To assemble the sandwich, spread a tablespoon of tonkatsu sauce on each slice of toasted bread.
  8. Place a crispy tofu cutlet on two of the slices, top with shredded cabbage, and sprinkle with sesame seeds if desired. Cap with the remaining slices of bread.
  9. Cut the sandwiches in half and serve immediately, with extra tonkatsu sauce on the side if desired.
