Ingredients

  • dried hijiki seaweed - 20 grams
  • carrot - 1 medium, julienned
  • cucumber - 1 medium, thinly sliced
  • red bell pepper - 1/2, thinly sliced
  • edamame (shelled) - 100 grams
  • sesame oil - 1 tablespoon
  • soy sauce - 2 tablespoons
  • rice vinegar - 1 tablespoon
  • maple syrup - 1 teaspoon
  • toasted sesame seeds - 1 tablespoon
  • green onion - 1, chopped

Steps

  1. Soak the dried hijiki seaweed in water for 20 minutes, then drain and rinse under cold water.
  2. In a pot, bring water to a boil and add the edamame. Cook for 3-5 minutes until tender, then drain and cool.
  3. In a large mixing bowl, combine the soaked hijiki, julienned carrot, sliced cucumber, sliced red bell pepper, and cooked edamame.
  4. In a separate small bowl, whisk together the sesame oil, soy sauce, rice vinegar, and maple syrup to create the dressing.
  5. Pour the dressing over the salad mixture and toss well to combine.
  6. Garnish with toasted sesame seeds and chopped green onion before serving.
