Ingredients

  • Goya (bitter melon) - 150 grams, thinly sliced
  • Firm tofu - 200 grams, cubed
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Onion - 1 small, sliced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Green onions - 2 stalks, chopped for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the cubed tofu and sauté until golden brown on all sides, about 5-7 minutes.
  3. Remove the tofu from the skillet and set aside.
  4. In the same skillet, add sesame oil, then add the sliced onion and minced garlic. Sauté until fragrant, about 2 minutes.
  5. Add the sliced goya, carrot, and red bell pepper to the skillet. Stir-fry for about 5 minutes, until the vegetables are tender.
  6. Return the browned tofu to the skillet and pour the soy sauce over the mixture. Stir well to combine and cook for another 3-5 minutes.
  7. Season with salt and black pepper to taste, and remove from heat.
  8. Serve hot, garnished with chopped green onions.
