Ingredients
- Goya (bitter melon) - 150 grams, thinly sliced
- Firm tofu - 200 grams, cubed
- Carrot - 1 medium, julienned
- Red bell pepper - 1 medium, sliced
- Garlic - 2 cloves, minced
- Onion - 1 small, sliced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Green onions - 2 stalks, chopped for garnish
Steps
- Heat olive oil in a large skillet over medium heat.
- Add the cubed tofu and sauté until golden brown on all sides, about 5-7 minutes.
- Remove the tofu from the skillet and set aside.
- In the same skillet, add sesame oil, then add the sliced onion and minced garlic. Sauté until fragrant, about 2 minutes.
- Add the sliced goya, carrot, and red bell pepper to the skillet. Stir-fry for about 5 minutes, until the vegetables are tender.
- Return the browned tofu to the skillet and pour the soy sauce over the mixture. Stir well to combine and cook for another 3-5 minutes.
- Season with salt and black pepper to taste, and remove from heat.
- Serve hot, garnished with chopped green onions.
