Ingredients

  • Brown rice - 150 grams
  • Firm tofu - 200 grams
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Broccoli florets - 100 grams
  • Spinach - 50 grams
  • Soy sauce - 2 tablespoons
  • Miso paste - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon
  • Water - 300 milliliters

Steps

  1. Rinse the brown rice under cold water until the water runs clear. In a pot, combine the rice and 300 ml of water, bring to a boil, then reduce heat to low, cover, and simmer for 25 minutes until tender.
  2. While the rice is cooking, press the firm tofu to remove excess moisture, then cut it into cubes.
  3. In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for 1 minute until fragrant.
  4. Add the cubed tofu to the skillet and cook for about 5-7 minutes, turning occasionally until golden brown on all sides.
  5. Stir in the julienned carrot, sliced bell pepper, and broccoli florets. Sauté for another 5 minutes until the vegetables are tender but still crisp.
  6. In a small bowl, mix the soy sauce and miso paste until smooth. Pour this mixture over the sautéed vegetables and tofu, stirring well to coat. Add the spinach and cook for another 2 minutes until wilted.
  7. Once the rice is cooked, fluff it with a fork and divide it between two bowls. Top each bowl with the tofu and vegetable mixture.
  8. Garnish with chopped green onions and sesame seeds before serving.
