Ingredients
- Glutinous rice flour - 100 grams
- Water - 150 ml
- Sugar - 30 grams
- Red bean paste (sweetened) - 100 grams
- Cornstarch - 30 grams (for dusting)
- Matcha powder - 1 teaspoon (for flavor and color, optional)
Steps
- In a mixing bowl, combine the glutinous rice flour, sugar, and matcha powder (if using).
- Gradually add water to the dry mixture, stirring until smooth and well combined.
- Transfer the batter to a heatproof dish or bowl that fits inside a steamer.
- Steam the batter over boiling water for about 20 minutes, stirring halfway through, until it becomes translucent.
- Once cooked, remove from the steamer and let it cool for a few minutes until manageable.
- Dust a clean surface with cornstarch and turn the cooked dough onto it, dusting the top with more cornstarch.
- Divide the dough into 4 equal pieces. Flatten each piece into a round disc.
- Place a spoonful of red bean paste in the center of each disc, then fold the edges over to seal the filling inside, shaping it into a ball.
- Roll each daifuku lightly in cornstarch to prevent sticking.
- Serve immediately or store in an airtight container at room temperature for up to a day.
