Ingredients

  • Glutinous rice flour - 100 grams
  • Water - 150 ml
  • Sugar - 30 grams
  • Red bean paste (sweetened) - 100 grams
  • Cornstarch - 30 grams (for dusting)
  • Matcha powder - 1 teaspoon (for flavor and color, optional)

Steps

  1. In a mixing bowl, combine the glutinous rice flour, sugar, and matcha powder (if using).
  2. Gradually add water to the dry mixture, stirring until smooth and well combined.
  3. Transfer the batter to a heatproof dish or bowl that fits inside a steamer.
  4. Steam the batter over boiling water for about 20 minutes, stirring halfway through, until it becomes translucent.
  5. Once cooked, remove from the steamer and let it cool for a few minutes until manageable.
  6. Dust a clean surface with cornstarch and turn the cooked dough onto it, dusting the top with more cornstarch.
  7. Divide the dough into 4 equal pieces. Flatten each piece into a round disc.
  8. Place a spoonful of red bean paste in the center of each disc, then fold the edges over to seal the filling inside, shaping it into a ball.
  9. Roll each daifuku lightly in cornstarch to prevent sticking.
  10. Serve immediately or store in an airtight container at room temperature for up to a day.
