Ingredients

  • Soba noodles - 200 grams
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Radish - 4 small, thinly sliced
  • Green onion - 2, chopped
  • Sesame seeds - 2 tablespoons, toasted
  • Nori seaweed - 1 sheet, cut into strips
  • Soy sauce - 4 tablespoons
  • Mirin - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Water - 1 liter
  • Ice cubes - as needed

Steps

  1. Cook the soba noodles according to package instructions in boiling water for about 5-7 minutes until al dente. Drain and rinse under cold water to stop the cooking process.
  2. In a bowl, combine soy sauce, mirin, and rice vinegar to create the dipping sauce.
  3. Prepare the vegetables by julienning the cucumber and carrot, and thinly slicing the radish. Chop the green onion and set aside.
  4. Once the noodles are cooled, place them in a serving bowl or on a plate. Arrange the julienned cucumber, carrot, sliced radish, and chopped green onion around the noodles.
  5. Sprinkle the toasted sesame seeds and nori strips on top of the noodles and vegetables.
  6. Serve the chilled soba with the dipping sauce on the side, and add ice cubes to the sauce if desired to keep it cool.
