Ingredients

  • Cooked white rice - 1 cup (200g)
  • Vegetable broth - 2 cups (480ml)
  • Nori seaweed - 2 sheets, torn into small pieces
  • Green onions - 2 tablespoons, finely chopped
  • Pickled ginger - 2 tablespoons, chopped
  • Sesame seeds - 1 tablespoon, toasted
  • Miso paste - 1 tablespoon
  • Soy sauce - 1 teaspoon
  • Chili flakes - to taste
  • Shiitake mushrooms - 100g, sliced
  • Spinach - 100g, blanched and chopped

Steps

  1. In a small pot, warm the vegetable broth over medium heat.
  2. Add the sliced shiitake mushrooms and let them cook for 5 minutes until tender.
  3. Stir in the miso paste and soy sauce, mixing well until dissolved.
  4. In a serving bowl, place half of the cooked white rice for each serving.
  5. Pour the warm broth with mushrooms over the rice evenly.
  6. Top each bowl with blanched spinach, torn nori pieces, green onions, pickled ginger, and toasted sesame seeds.
  7. Sprinkle with chili flakes to taste and serve immediately.
