- Vegetable broth - 2 cups (480ml)
- Nori seaweed - 2 sheets, torn into small pieces
- Green onions - 2 tablespoons, finely chopped
- Pickled ginger - 2 tablespoons, chopped
- Sesame seeds - 1 tablespoon, toasted
- Miso paste - 1 tablespoon
- Soy sauce - 1 teaspoon
- Chili flakes - to taste
- Shiitake mushrooms - 100g, sliced
- Spinach - 100g, blanched and chopped
Steps
- In a small pot, warm the vegetable broth over medium heat.
- Add the sliced shiitake mushrooms and let them cook for 5 minutes until tender.
- Stir in the miso paste and soy sauce, mixing well until dissolved.
- In a serving bowl, place half of the cooked white rice for each serving.
