- Silken tofu - 150 grams
- Vegetable broth - 300 ml
- Soy sauce - 1 tablespoon
- Mirin - 1 tablespoon
- Cornstarch - 2 tablespoons
- Nutritional yeast - 2 tablespoons
- Mushrooms (shiitake or button) - 50 grams, diced
- Green onions - 1 tablespoon, finely chopped
- Carrot - 1 small, julienned
- Frozen peas - 2 tablespoons
- Sesame oil - 1 teaspoon
- Salt - to taste
Steps
- In a blender, combine the silken tofu, vegetable broth, soy sauce, mirin, nutritional yeast, and cornstarch. Blend until smooth.
- Heat a small pan over medium heat and add sesame oil. Sauté the diced mushrooms, julienned carrot, and green onions for about 3-5 minutes until softened.
- In a mixing bowl, combine the blended tofu mixture with the sautéed vegetables and frozen peas. Stir well and season with salt to taste.
- Prepare two ramekins by lightly greasing them with oil. Divide the tofu mixture evenly between the ramekins.
- Place the ramekins in a steamer basket over simmering water. Cover and steam for about 15-20 minutes, or until the custard is set.
- Remove from the steamer and let cool slightly before serving. Garnish with additional green onions or a drizzle of soy sauce if desired.
