Ingredients

  • Silken tofu - 150 grams
  • Vegetable broth - 300 ml
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • Nutritional yeast - 2 tablespoons
  • Mushrooms (shiitake or button) - 50 grams, diced
  • Green onions - 1 tablespoon, finely chopped
  • Carrot - 1 small, julienned
  • Frozen peas - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - to taste

Steps

  1. In a blender, combine the silken tofu, vegetable broth, soy sauce, mirin, nutritional yeast, and cornstarch. Blend until smooth.
  2. Heat a small pan over medium heat and add sesame oil. Sauté the diced mushrooms, julienned carrot, and green onions for about 3-5 minutes until softened.
  3. In a mixing bowl, combine the blended tofu mixture with the sautéed vegetables and frozen peas. Stir well and season with salt to taste.
  4. Prepare two ramekins by lightly greasing them with oil. Divide the tofu mixture evenly between the ramekins.
  5. Place the ramekins in a steamer basket over simmering water. Cover and steam for about 15-20 minutes, or until the custard is set.
  6. Remove from the steamer and let cool slightly before serving. Garnish with additional green onions or a drizzle of soy sauce if desired.
