Vegan Chashu Don

Ingredients
- Soy curls - 100 grams
- Vegetable broth - 200 ml
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Maple syrup - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cooked sushi rice - 300 grams
- Green onions - 2, sliced
- Nori sheets - 1, cut into strips
- Sesame seeds - 1 tablespoon
- Pickled ginger - 2 tablespoons
Steps
- In a medium bowl, soak the soy curls in vegetable broth for 10 minutes until rehydrated, then drain and set aside.
- In a small saucepan, combine soy sauce, mirin, maple syrup, minced garlic, and grated ginger. Bring to a simmer over medium heat and let it reduce slightly for about 5 minutes.
- Add the drained soy curls to the saucepan and stir to coat them in the sauce. Cook for an additional 5 minutes, allowing the soy curls to absorb the flavors.
- While the soy curls are cooking, prepare the sushi rice according to package instructions if not already cooked.
- To assemble the bowls, divide the cooked sushi rice between two bowls. Top each with half of the soy curls and their sauce.
- Garnish with sliced green onions, nori strips, sesame seeds, and pickled ginger. Serve immediately.
