- Firm tofu - 300 grams
- Cornstarch - 4 tablespoons
- Vegetable oil - 2 tablespoons
- Dashi (vegan) - 300 ml
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Rice vinegar - 1 teaspoon
- Green onions (sliced) - 2 tablespoons
- Grated daikon radish - 2 tablespoons
- Sesame seeds - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Press the firm tofu for about 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
- In a bowl, toss the tofu cubes with cornstarch until evenly coated.
- Place the coated tofu on a baking sheet lined with parchment paper and drizzle with vegetable oil.
- Bake the tofu in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- While the tofu is baking, prepare the broth by combining vegan dashi, soy sauce, mirin, and rice vinegar in a small pot over medium heat. Bring to a gentle simmer and keep warm.
- Once the tofu is done, carefully transfer it to serving bowls and pour the warm broth over the tofu.
- Garnish with sliced green onions, grated daikon radish, and a sprinkle of sesame seeds before serving.
