Ingredients
- Cauliflower - 400 grams
- Unagi (grilled eel) - 200 grams
- Coconut aminos - 3 tablespoons
- Sesame oil - 1 tablespoon
- Green onions - 2 stalks, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Shiitake mushrooms - 100 grams, sliced
- Sea salt - to taste
- Black sesame seeds - for garnish
Steps
- Grate the cauliflower using a food processor or box grater to create cauliflower rice.
- In a large skillet, heat sesame oil over medium heat and add minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.
- Add sliced shiitake mushrooms to the skillet and cook for another 3-4 minutes until softened.
- Stir in the cauliflower rice and coconut aminos, cooking for about 5-7 minutes until the cauliflower is tender. Season with sea salt to taste.
- While the cauliflower rice is cooking, preheat a grill pan or skillet over medium heat and warm the grilled eel for about 2-3 minutes on each side.
- Once everything is cooked, divide the cauliflower rice between two bowls, top with the warmed unagi, and garnish with sliced green onions and black sesame seeds.
