Ingredients

  • Cauliflower - 400 grams
  • Unagi (grilled eel) - 200 grams
  • Coconut aminos - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions - 2 stalks, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Shiitake mushrooms - 100 grams, sliced
  • Sea salt - to taste
  • Black sesame seeds - for garnish

Steps

  1. Grate the cauliflower using a food processor or box grater to create cauliflower rice.
  2. In a large skillet, heat sesame oil over medium heat and add minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.
  3. Add sliced shiitake mushrooms to the skillet and cook for another 3-4 minutes until softened.
  4. Stir in the cauliflower rice and coconut aminos, cooking for about 5-7 minutes until the cauliflower is tender. Season with sea salt to taste.
  5. While the cauliflower rice is cooking, preheat a grill pan or skillet over medium heat and warm the grilled eel for about 2-3 minutes on each side.
  6. Once everything is cooked, divide the cauliflower rice between two bowls, top with the warmed unagi, and garnish with sliced green onions and black sesame seeds.
