Ingredients

  • Unagi (grilled eel) - 200 grams
  • Cooked sushi rice - 300 grams
  • Soy sauce - 3 tablespoons
  • Mirin - 2 tablespoons
  • Sugar - 1 tablespoon
  • Sake - 1 tablespoon
  • Nori (seaweed) - 2 sheets, cut into strips
  • Sesame seeds - 1 tablespoon, toasted
  • Green onions - 2, finely chopped
  • Pickled ginger - for garnish (optional)

Steps

  1. Prepare the sushi rice according to package instructions and set aside.
  2. In a small saucepan, combine soy sauce, mirin, sugar, and sake. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Remove from heat and let it cool slightly.
  3. In a grill or on a stovetop grill pan, heat the unagi until warmed through and slightly charred, about 5 minutes.
  4. Brush the unagi with the sauce mixture and grill for an additional 2-3 minutes, allowing the glaze to caramelize.
  5. To assemble, divide the cooked sushi rice into two bowls.
  6. Place the grilled unagi on top of the rice, then drizzle with more of the sauce.
  7. Garnish with nori strips, toasted sesame seeds, and chopped green onions. Serve with pickled ginger on the side if desired.
