- Cooked sushi rice - 300 grams

- Mirin - 2 tablespoons
- Sugar - 1 tablespoon
- Sake - 1 tablespoon
- Nori (seaweed) - 2 sheets, cut into strips
- Sesame seeds - 1 tablespoon, toasted
- Green onions - 2, finely chopped
- Pickled ginger - for garnish (optional)
Steps
- Prepare the sushi rice according to package instructions and set aside.
- In a small saucepan, combine soy sauce, mirin, sugar, and sake. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Remove from heat and let it cool slightly.
- In a grill or on a stovetop grill pan, heat the unagi until warmed through and slightly charred, about 5 minutes.
- Brush the unagi with the sauce mixture and grill for an additional 2-3 minutes, allowing the glaze to caramelize.
- To assemble, divide the cooked sushi rice into two bowls.
- Place the grilled unagi on top of the rice, then drizzle with more of the sauce.
- Garnish with nori strips, toasted sesame seeds, and chopped green onions. Serve with pickled ginger on the side if desired.
