Ingredients

  • Unagi (grilled eel) - 200 grams
  • Cooked Japanese short-grain rice - 300 grams
  • Soy sauce - 30 ml
  • Mirin - 30 ml
  • Sugar - 15 grams
  • Sake - 15 ml
  • Green onions - 2 stalks, chopped
  • Nori (seaweed) - 2 sheets, cut into strips
  • Sesame seeds - 1 tablespoon

Steps

  1. In a saucepan, combine soy sauce, mirin, sugar, and sake. Heat over medium heat until the sugar dissolves, and the mixture thickens slightly to create a glaze.
  2. While the glaze is cooking, prepare the cooked rice by steaming or microwaving it until warm.
  3. Grill or broil the unagi for about 5-7 minutes until heated through and slightly crispy on the edges.
  4. Once the glaze is ready, brush it generously over the grilled unagi.
  5. To serve, divide the warm rice into two bowls and place the glazed unagi on top.
  6. Garnish with chopped green onions, nori strips, and sesame seeds.
