Ingredients

  • Udon noodles - 200 grams

  • Bell pepper - 1 medium, sliced
  • Broccoli florets - 100 grams
  • Snow peas - 100 grams
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 teaspoon
  • Scallions - 2, chopped
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Cook the udon noodles according to package instructions, then drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
  4. Add the julienned carrot, sliced bell pepper, broccoli florets, and snow peas to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender yet crisp.
  5. Add the cooked udon noodles to the skillet, followed by the soy sauce and sesame oil. Toss everything together until well combined and heated through, about 2-3 minutes.
  6. Remove from heat and stir in the chopped scallions and toasted sesame seeds.
  7. Serve immediately, garnished with additional scallions or sesame seeds if desired.
