Ingredients

  • Udon noodles - 200 grams
  • Halal chicken breast - 150 grams, sliced
  • Chicken broth - 500 ml
  • Soy sauce - 2 tablespoons
  • Miso paste - 1 tablespoon
  • Green onions - 2, chopped
  • Carrot - 1 medium, julienned
  • Spinach - 100 grams, fresh
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant.
  2. Add the sliced halal chicken breast to the pot and cook until no longer pink, about 5-7 minutes.
  3. Pour in the chicken broth and bring to a simmer.
  4. Stir in the soy sauce and miso paste until fully dissolved.
  5. Add the julienned carrot and let it cook for 5 minutes until slightly tender.
  6. Meanwhile, cook the udon noodles according to package instructions; drain and set aside.
  7. Add the fresh spinach and chopped green onions to the broth, cooking for an additional 2-3 minutes until the spinach wilts.
  8. Season the soup with salt and black pepper to taste.
  9. To serve, place a portion of udon noodles in each bowl and ladle the hot broth and chicken mixture over the noodles.
