- Spinach - 100 grams, fresh
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant.
- Add the sliced halal chicken breast to the pot and cook until no longer pink, about 5-7 minutes.
- Pour in the chicken broth and bring to a simmer.
- Stir in the soy sauce and miso paste until fully dissolved.
- Add the julienned carrot and let it cook for 5 minutes until slightly tender.
- Meanwhile, cook the udon noodles according to package instructions; drain and set aside.
- Add the fresh spinach and chopped green onions to the broth, cooking for an additional 2-3 minutes until the spinach wilts.
- Season the soup with salt and black pepper to taste.
- To serve, place a portion of udon noodles in each bowl and ladle the hot broth and chicken mixture over the noodles.
