  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Shiitake mushrooms - 150 grams, sliced
  • Zucchini - 1 medium, julienned
  • Eggs - 2 large
  • Parmesan cheese - 50 grams, grated
  • Black pepper - to taste
  • Salt - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Cook the udon noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and add minced garlic, sautéing until fragrant.
  3. Add sliced shiitake mushrooms to the skillet and cook until they release their moisture and become tender, about 5 minutes.
  4. Stir in the julienned zucchini and cook for an additional 3-4 minutes until just softened.
  5. In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.
  6. Reduce the heat to low and add the cooked udon noodles to the skillet with the vegetables, tossing to combine.
  7. Remove the skillet from heat and quickly pour the egg mixture over the noodles, stirring vigorously to create a creamy sauce without scrambling the eggs.
