Ingredients

  • Udon noodles - 200 grams

  • Spinach - 100 grams, washed
  • Green onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the udon noodles according to the package instructions, then drain and set aside.
  2. In a large pot, heat the sesame oil over medium heat and add the minced garlic and grated ginger. Sauté until fragrant, about 1 minute.
  3. Add the sliced shiitake mushrooms and julienned carrot to the pot, cooking for about 3-4 minutes until they begin to soften.
  4. Pour in the vegetable broth and soy sauce, then bring the mixture to a gentle simmer.
  5. After 5 minutes, add the spinach and cooked udon noodles to the pot, stirring gently to combine.
  6. Allow everything to heat through for another 2-3 minutes, seasoning with salt and black pepper to taste.
