Steps
- Cook the udon noodles according to the package instructions, then drain and set aside.
- In a large pot, heat the sesame oil over medium heat and add the minced garlic and grated ginger. Sauté until fragrant, about 1 minute.
- Add the sliced shiitake mushrooms and julienned carrot to the pot, cooking for about 3-4 minutes until they begin to soften.

- After 5 minutes, add the spinach and cooked udon noodles to the pot, stirring gently to combine.
