Ingredients
- Sushi rice - 150 grams
- Water - 200 ml
- Fresh tuna steak (sushi grade) - 200 grams
- Soy sauce (Halal) - 30 ml
- Mirin - 15 ml
- Sesame oil - 5 ml
- Rice vinegar - 10 ml
- Sugar - 5 grams
- Black sesame seeds - 1 tablespoon
- Spring onions (chopped) - 2 tablespoons
- Cucumber (sliced thinly) - 50 grams
- Radish (sliced thinly) - 50 grams
- Avocado (sliced) - 50 grams
- Wasabi - to taste
- Pickled ginger - for garnish
Steps
- Rinse the sushi rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed sushi rice and 200 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed.
- Remove the rice from heat and let it sit, covered, for 10 minutes. Fluff with a fork and mix in rice vinegar, sugar, and a pinch of salt. Set aside to cool.
- While the rice is cooling, prepare the marinade by mixing soy sauce, mirin, sesame oil, and a pinch of sugar in a small bowl.
- Lightly sear the tuna steak in a hot pan for about 30 seconds on each side, keeping the center raw. Remove from the heat and let it rest for a few minutes before slicing thinly.
- To assemble the don, divide the sushi rice into two bowls. Arrange the sliced tuna on top of the rice.
- Garnish with cucumber, radish, avocado, black sesame seeds, and chopped spring onions.
- Drizzle some of the marinade over the top and serve with wasabi and pickled ginger on the side.
