Ingredients

  • Fresh tuna steak - 200 grams
  • Soy sauce - 30 ml
  • Mirin - 15 ml
  • Rice vinegar - 10 ml
  • Sesame oil - 5 ml
  • Green onions - 2 stalks, finely chopped
  • Sesame seeds - 10 grams, toasted
  • Wasabi - to taste
  • Cucumber - 1 small, for garnish
  • Radish - 1 small, for garnish

Steps

  1. Pat the tuna steak dry with paper towels and place it in the freezer for about 15 minutes to firm up, making it easier to slice.
  2. While the tuna is cooling, prepare the dipping sauce by mixing soy sauce, mirin, rice vinegar, and sesame oil in a small bowl.
  3. Once the tuna is firm, remove it from the freezer and slice it into 1 cm thick pieces using a sharp knife.
  4. In a hot skillet over medium-high heat, sear the tuna slices for about 30 seconds on each side until browned but still rare in the center.
  5. Remove the tuna from the skillet and let it rest briefly before plating.
  6. Arrange the tuna slices on a plate, drizzle the dipping sauce over them, and sprinkle with chopped green onions and toasted sesame seeds.
  7. Garnish the plate with thinly sliced cucumber and radish for a refreshing crunch.
