Ingredients

  • Sushi rice - 200 grams
  • Water - 250 ml
  • Rice vinegar - 30 ml
  • Sugar - 10 grams
  • Salt - 5 grams
  • Fresh tuna (sashimi grade) - 200 grams
  • Soy sauce - 30 ml
  • Sesame oil - 5 ml
  • Scallions (green onions) - 2 stalks
  • Sesame seeds - 10 grams
  • Nori sheets (seaweed) - 2 sheets

Steps

  1. Rinse the sushi rice under cold water until the water runs clear. Drain and let it sit for 30 minutes.
  2. In a medium saucepan, combine the rinsed rice and 250 ml of water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 15 minutes.
  3. Remove the saucepan from heat and let it sit, covered, for an additional 10 minutes to allow the rice to steam.
  4. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is ready, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.
  5. While the rice cools, slice the fresh tuna into thin sashimi slices.
  6. Chop the scallions finely.
  7. To assemble the don, divide the sushi rice between two bowls. Arrange the sliced tuna on top of the rice.
  8. Drizzle soy sauce and sesame oil over the tuna. Sprinkle chopped scallions and sesame seeds on top.
  9. Cut nori sheets into strips and place on the side of each bowl for decoration. Serve immediately.
