Ingredients

  • Rice vinegar - 50 ml
  • Sugar - 10 grams
  • Sesame seeds - 1 tablespoon
  • Steamed rice - 200 grams
  • Miso soup - 300 ml

Steps

  1. Begin by slicing the cucumber, daikon radish, and carrot into thin rounds or strips, and chop the napa cabbage into bite-sized pieces.
  2. In a mixing bowl, combine the sliced vegetables with salt and mix well. Let them sit for about 15 minutes to draw out moisture.
  3. In a separate bowl, whisk together rice vinegar and sugar until the sugar dissolves.
  4. Add the drained vegetables to the vinegar mixture and stir to combine. Allow the mixture to marinate for at least 10 minutes.
  5. Meanwhile, prepare the steamed rice according to package instructions and make the miso soup by dissolving miso paste in hot water.
  6. Once the vegetables have marinated, arrange them artfully on a platter, sprinkle with sesame seeds, and serve alongside steamed rice and miso soup.
