Ingredients

  • Chicken thighs - 300 grams, skinless and boneless
  • Soy sauce (kosher) - 60 ml
  • Mirin (kosher) - 30 ml
  • Brown sugar - 1 tablespoon (15 grams)
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 tablespoon (15 ml)
  • Green onions - 2, chopped for garnish
  • Sesame seeds - 1 tablespoon, toasted
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a bowl, mix the soy sauce, mirin, brown sugar, minced garlic, grated ginger, and sesame oil to create the marinade.
  2. Cut the chicken thighs into bite-sized pieces and add them to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade, reserving the marinade for later use. Season the chicken with salt and pepper.
  5. Grill the chicken pieces for about 6-8 minutes per side, or until fully cooked and slightly charred, basting with the reserved marinade during the last few minutes of grilling.
  6. Once cooked, remove the chicken from the grill and let it rest for a few minutes.
  7. Serve the grilled chicken garnished with chopped green onions and toasted sesame seeds.
