Ingredients

  • Chicken carcass - 500 grams
  • Water - 1.5 liters
  • Garlic - 4 cloves, crushed
  • Ginger - 1 inch piece, sliced
  • Scallions - 2, chopped
  • Soy sauce - 60 ml (kosher)
  • Mirin - 30 ml (kosher)
  • Ramen noodles - 200 grams
  • Shiitake mushrooms - 100 grams, sliced
  • Napa cabbage - 100 grams, chopped
  • Soft-boiled eggs - 2
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, combine the chicken carcass, water, garlic, ginger, and scallions. Bring to a boil, then reduce heat to a simmer.
  2. Simmer the broth for about 60 minutes, skimming off any impurities that float to the surface.
  3. After 60 minutes, remove the chicken carcass and strain the broth through a fine sieve. Return the liquid to the pot.
  4. Stir in the soy sauce, mirin, sesame oil, salt, and black pepper. Keep warm on low heat.
  5. In a separate pot, cook the ramen noodles according to package instructions. Drain and set aside.
  6. In the same pot, briefly sauté the shiitake mushrooms and napa cabbage until tender.
  7. To serve, place a portion of ramen noodles in a bowl, ladle the hot broth over the noodles, and arrange the sautéed vegetables on top.
  8. Cut the soft-boiled eggs in half and place them atop the ramen. Garnish with additional scallions if desired.
