Ingredients
- Chicken carcass - 500 grams
- Water - 1.5 liters
- Garlic - 4 cloves, crushed
- Ginger - 1 inch piece, sliced
- Scallions - 2, chopped
- Soy sauce - 60 ml (kosher)
- Mirin - 30 ml (kosher)
- Ramen noodles - 200 grams
- Shiitake mushrooms - 100 grams, sliced
- Napa cabbage - 100 grams, chopped
- Soft-boiled eggs - 2
- Sesame oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, combine the chicken carcass, water, garlic, ginger, and scallions. Bring to a boil, then reduce heat to a simmer.
- Simmer the broth for about 60 minutes, skimming off any impurities that float to the surface.
- After 60 minutes, remove the chicken carcass and strain the broth through a fine sieve. Return the liquid to the pot.
- Stir in the soy sauce, mirin, sesame oil, salt, and black pepper. Keep warm on low heat.
- In a separate pot, cook the ramen noodles according to package instructions. Drain and set aside.
- In the same pot, briefly sauté the shiitake mushrooms and napa cabbage until tender.
- To serve, place a portion of ramen noodles in a bowl, ladle the hot broth over the noodles, and arrange the sautéed vegetables on top.
- Cut the soft-boiled eggs in half and place them atop the ramen. Garnish with additional scallions if desired.
