Ingredients

  • Chicken thighs - 300g
  • Water - 1.5 liters
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, sliced
  • Onion - 1 medium, quartered
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Miso paste - 1 tablespoon
  • Salt - to taste
  • Green onions - 2, chopped
  • Bok choy - 100g, chopped
  • Noodles (udon or soba) - 150g
  • Sesame oil - 1 teaspoon

Steps

  1. In a large pot, add the chicken thighs, water, garlic, ginger, and onion. Bring to a boil over medium-high heat.
  2. Once boiling, reduce heat to low and simmer for 30 minutes, skimming any foam that forms on the surface.
  3. Remove the chicken thighs and let them cool slightly before shredding the meat. Discard the skin and bones.
  4. Strain the broth to remove the solids, returning the clear broth to the pot.
  5. Add the shredded chicken back into the pot along with soy sauce, mirin, and miso paste. Stir until the miso is dissolved.
  6. Add bok choy and noodles to the pot and cook for an additional 5-7 minutes until the noodles are tender.
  7. Taste the soup and add salt if needed.
  8. Serve hot, garnished with chopped green onions and a drizzle of sesame oil.
