Ingredients
- Chicken thighs - 300g
- Water - 1.5 liters
- Garlic - 3 cloves, minced
- Ginger - 1 inch, sliced
- Onion - 1 medium, quartered
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Miso paste - 1 tablespoon
- Salt - to taste
- Green onions - 2, chopped
- Bok choy - 100g, chopped
- Noodles (udon or soba) - 150g
- Sesame oil - 1 teaspoon
Steps
- In a large pot, add the chicken thighs, water, garlic, ginger, and onion. Bring to a boil over medium-high heat.
- Once boiling, reduce heat to low and simmer for 30 minutes, skimming any foam that forms on the surface.
- Remove the chicken thighs and let them cool slightly before shredding the meat. Discard the skin and bones.
- Strain the broth to remove the solids, returning the clear broth to the pot.
- Add the shredded chicken back into the pot along with soy sauce, mirin, and miso paste. Stir until the miso is dissolved.
- Add bok choy and noodles to the pot and cook for an additional 5-7 minutes until the noodles are tender.
- Taste the soup and add salt if needed.
- Serve hot, garnished with chopped green onions and a drizzle of sesame oil.
