- Chicken thighs, boneless - 400 grams
- Coconut aminos - 3 tablespoons
- Rice vinegar - 1 tablespoon
- Garlic, minced - 2 cloves
- Ginger, grated - 1 teaspoon
- Arrowroot flour - 100 grams
- Coconut oil, for frying - 500 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Green onions, chopped - 2 tablespoons, for garnish
Steps
- Cut the chicken thighs into bite-sized pieces and place them in a mixing bowl.
- In a separate bowl, combine coconut aminos, rice vinegar, minced garlic, grated ginger, salt, and black pepper to create the marinade.
- Pour the marinade over the chicken and mix well. Cover and let it marinate in the refrigerator for at least 15 minutes.
- While the chicken is marinating, heat the coconut oil in a deep skillet or pot over medium-high heat.
- Once marinated, remove the chicken from the fridge and coat each piece evenly with arrowroot flour.
- Carefully place the coated chicken pieces into the hot oil, ensuring not to overcrowd the pan. Fry for about 5-7 minutes until golden brown and cooked through.
- Remove the chicken from the oil and place it on a plate lined with paper towels to absorb excess oil.
- Garnish with chopped green onions before serving.
