Ingredients

  • Chicken thighs, boneless - 400 grams
  • Coconut aminos - 3 tablespoons
  • Rice vinegar - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Arrowroot flour - 100 grams
  • Coconut oil, for frying - 500 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Green onions, chopped - 2 tablespoons, for garnish

Steps

  1. Cut the chicken thighs into bite-sized pieces and place them in a mixing bowl.
  2. In a separate bowl, combine coconut aminos, rice vinegar, minced garlic, grated ginger, salt, and black pepper to create the marinade.
  3. Pour the marinade over the chicken and mix well. Cover and let it marinate in the refrigerator for at least 15 minutes.
  4. While the chicken is marinating, heat the coconut oil in a deep skillet or pot over medium-high heat.
  5. Once marinated, remove the chicken from the fridge and coat each piece evenly with arrowroot flour.
  6. Carefully place the coated chicken pieces into the hot oil, ensuring not to overcrowd the pan. Fry for about 5-7 minutes until golden brown and cooked through.
  7. Remove the chicken from the oil and place it on a plate lined with paper towels to absorb excess oil.
  8. Garnish with chopped green onions before serving.
