Ingredients

  • Chicken thighs, skin-on - 400 grams
  • Soy sauce - 30 ml
  • Sake - 15 ml
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Xanthan gum - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Almond flour - 50 grams
  • Avocado oil (for frying) - 500 ml

Steps

  1. Cut the chicken thighs into bite-sized pieces and place them in a bowl.
  2. In a separate bowl, combine soy sauce, sake, minced garlic, minced ginger, xanthan gum, sesame oil, salt, and black pepper to create a marinade.
  3. Pour the marinade over the chicken pieces and mix well. Cover and let marinate in the refrigerator for at least 15 minutes.
  4. In a shallow dish, spread the almond flour evenly.
  5. Heat avocado oil in a deep skillet or fryer over medium-high heat until it reaches 180°C (350°F).
  6. Take the marinated chicken pieces and coat them lightly in almond flour, shaking off any excess.
  7. Carefully place the coated chicken pieces into the hot oil and fry in batches for about 5-7 minutes or until golden brown and cooked through.
  8. Remove the fried chicken from the oil and place it on a paper towel-lined plate to drain excess oil.
  9. Serve hot with a sprinkle of salt and your choice of low-carb dipping sauce.
